Biography


By chance, a job at a Japanese restaurant opened up a timid youngster’s persisting interest in culinary art.  In the 70’s, Japanese cuisine was just beginning to bloom in the market, and as a chef, he was always passionate and dedicated about his work.  With close observations through out his working process, a series of questions were raised; such as, when a customer dislikes a certain dish in the set menu, would there be other alternative options provided?  Where can one discovered more quality ingredients to be able to utilize in the dish?  Do the high class ingredients used in Japanese cuisine have to be so highly priced?  The continuous pondering over the questions and answers has led to the blossoming of another idea...

        Japanese cuisine was crowned to be expensive and on top of any other styles of cuisines in the culinary environment of Taiwan during the 80’s.  However, with the limited ingredients and set styles, it’s no wonder that people often think that chawanmushi or tempuras are the representations of Japanese cuisine.  In order to solidify a long-term ideal, and after over-coming many obstacles partly due to lack of experiences in management, in the year 1991, the first Mitsui restaurant was established.  Up until now, Mitsui has expanded with four branch restaurants, and the working team has increased from the founding four to the current 250.  

Comparing with the prevalent farm-raised seafood, Mitsui stands firmly with our years of professional ethics and insists in only using natural seafood and also natural tuna from Taiwan’s East Harbor.  This process matches seamlessly with the current health trend, and in conjunction with modern technology, the freshness of the fish can be well maintained all year round.  Recently, we have energetically developed many rare and natural high quality ingredients, and have traveled afar to the sources of origins.  This step is also helpful to cut down on the transaction expenses and with direct purchases and immediately freshness upkeep for delivery to each storefront, the entire process is natural without chemical procedures.  We offer the best seafood delicacies with a fair price to our customers.  Moreover, in order to break the standard mold of Japanese cuisine, Mitsui has created many diverse innovative dishes, and have designed our set menus according to the needs of our customers.  Since the launching of our creative menu, Mitsui has received many good feedbacks, and has influenced the culinary industry to a great extend.  For a consistent time now, our customers have great trust and confidence in Mitsui’s prices and values, and this is also the most precious brand asset to Mitsui.

To satisfy our customers’ expectations and to exceed their expectations is the highest goal of Mitsui.  Although the road ahead to achieve our goal is still an extensive way ahead of us, but we believe that if the entire Mitsui team puts forth all of our efforts, the persistent and dedicated ones will be granted with the best outcome.
